Chocolate Fudge Pudding

You will need:
For the cake

4 oz granulated (or caster) sugar
4 oz dairy free margarine
3 oz self raising flour
2 tablespoons cocoa powder
1 teaspoon ground ginger
1 teaspoon rum essence
2 eggs

For the sauce
2 tablespoons cocoa powder
4 oz soft brown sugar
½ pint boiling water

1. Cream the sugar with the margarine.
2. Mix the eggs with the rum essence and gradually add to the creamed sugar and margarine mixture.
3. Mix the flour with 2 tablespoons of cocoa and the ginger.  Fold into the mixture.
4. Put the mixture into 2 ½ pint oven dishes.
5. Mix the remaining cocoa with the soft brown sugar in a pint jug
6. Pour the water over the cocoa & sugar, siring until dissolved.
7. Pour the sauce over the cake mixture
8. Bake for 40 minutes at 190°C or gas mark 5.
